Many moons ago a good friend introduced me to this delectable guacamole recipe. It was the start of a beautiful but rocky relationship.
We were the best of friends until one fateful night when I overindulged in this delectable treat and made my tummy very unhappy. This unfortunate incident was the first of many such encounters.
After many years apart, we reunited over the past weekend. It tasted as wonderful as I remembered, but my delight was short lived. A familiar altercation ensued, and I have once again kicked my dear old friend guacamole to the curb under circumstances too painful to recount. I have come to the conclusion that we simply cannot live in harmony, no matter how much I wish it to be so.
Before we parted, however, I took this snapshot. I decided that just because we can’t be friends, it doesn’t mean that I can’t share this culinary delight with the rest of you. Perhaps you will have a more peaceable encounter. Enjoy with my super easy and delicious margaritas!
- 1/2 red onion, small diced
- 1 handfull grape tomatoes, quartered
- 1 handfull chopped fresh cilantro
- juice of half a lime (or more to taste)
- 1/2 tsp sea salt (or more to taste)
- 2 ripe avocados, mashed
- Mix and serve with non-GMO corn chips.
- Dip. Eat. Repeat.
Eat one for me!
I love guac! So sorry it gives you tummy troubles.
And yes, do not over do it on the salt. One time I made guac and got a little heavy handed with the salt and my family started calling it saltomole. That was almost three years ago. Every time I make guac they call it that! Every. Time.
I love guacamole! Thanks for the recipe!
This looks delicious and easy…will try it this week 🙂
I love guacamole, but I like green onions in mine. I know it isn’t a common ingredient, but I love it that way. So yummy.
looks easy enough for me! Finally a guacamole that does not look too complicated!
Adding diced jalapeno (too taste) is good also…mild ones for the kiddos, of course.
That looks delightful! I love the addition of the tomatoes and onion – ymmmm. Sorry it doesn’t sit well with you, but so glad you shared.
And you also mentioned non-GM corn chips. Have you seen chips that are labeled as non-GM? I’ve never noticed it. Can you tell us specific brands to look for?
Yes, organic products must be non-GM as far as I know. I usually buy the Bearitos brand (I also buy their taco shells) or the Garden of Eatin’ brand – love their black corn chips. But even organic Tostitos SHOULD be non-GMO.
So what do you think it is? Avocado? I’m so sorry it made you sick. Looks great.
Yummy – just looking at this makes me want to crank up the Gypsy Kings and crack open a Corona!

YUM! I’ll definitely eat some for you! LOL
Dip, eat, repeat : )
Funny!
I can’t even imagine how long it takes you to do your wardrobe posts…oh my gosh!
Could you please add my link to the Philly Social Media Moms Link page?
Thanks. Becky from Life with Kaishon
LOVE love guac! I am bummed for you and your tummy!
That’s my favorite guac recipe. Yum-o!! I could make a whole meal out of it (and I did tonight!).
*jealous*
Hard to beat a good guac recipe! Thanks for sharing. I’ll be sure to eat enough for the both of us! Sorry you can’t enjoy it! Is it the avocado?
So sad that you and Guac have parted ways. I would have a rendez vous with guac any day, best in private as I tend to lick the bowl. Thanks for the recipe. can’t wait to try it.
It looks delicious (and healthful!) (and so much better than adding a store-bought guacamole powder – ick!).
Storebought WAHHHHH??? I had no idea there WAS such a thing.
**shudder**
Yummm…. looks very good. I love guacamole. But sadly I’m the only one in my family that likes it. So I’d have to make it and take it somewhere. I have a friend that is on a gluten free diet so I’ll tell her about your blog.
