Coffee Talk: Cinco de Mayo Edition

Greetings and happy Cinco de Mayo!

Okay, so I had to google why Cinco de Mayo is a thing… beyond an excuse to make margaritas, of course.

But hey, if you need an easy and delicious margarita recipe, I’ve gotcha covered!

Also, this guac recipe is amazing, and I make these tacos about once a week. I usually make taco lettuce wraps out of mine to save on calories… but then I load them up with sour cream. I know, it makes no sense, but a taco without sour cream is like french fries without salt… what’s the point?

We are actually having friends over tonight, but I haven’t decided yet if I’m going to make the tacos or just serve snacks. Margaritas, however, are a non-negotiable.

Any-who. I hope you’re having a good weekend. We went out with another couple on Friday night, and that was fun. We haven’t done that in a while.

Yesterday was sort of a slow day, although I ended up going out for a photo shoot in the afternoon. Alison had another appointment at one of our regular shooting locations, so she offered me the time slot afterwards. I forgot my white jeans when I met with her on Wednesday (ooops!) so she knew I had a few more looks I wanted to capture.

It turned out to be a really pretty afternoon, so I was happy to take advantage of that. It seems like I always get the worst weather for our shoots.

Last night Paul and D went to the Phillies game, and the girls and I just hung out here. It was relaxing and low-key. R and I watched the Queen + Adam Lambert story that I reordered earlier in the week.

We’re both huge American Idol fans, and I loved the season Lambert was on… I was totally rooting for him to win, although it was probably better for his career that he didn’t.

I knew he was an amazing talent, and I’ve been a huge fan since day 1, but I didn’t really realize quite how phenomenal his voice is until I watched the show last night. Anyway, it was fascinating, and the perfect way to spend a lazy Saturday night.

I haven’t seen the Bohemian Rhapsody movie, but we did see the We Will Rock You Broadway musical, which was amazing. It was D’s Christmas present one year. Yes, he’s a fan as well. Maybe I should wait till he’s home for the summer and see if he wants to watch the movie with me.

Speaking of D, he’ll be done with his freshman year on Friday!

I’m sure it will be an adjustment to have him back home, but I’m looking forward to seeing more of him. Any moms of college kids have any advice for us? Haha!

At some point next month, he’ll be able to move into his new apartment, but I don’t think he’ll live there until band camp starts in August. His summer job is close to here, and his friends are up this way. Plus let’s face it, I put dinner on the table {almost} every night and do his laundry. Why wouldn’t he want to stay here?

Meanwhile, C is well on her way to getting her driver’s license. She has her permit, and we’ve been letting her drive around town. I finally called and got her a driving instructor because a) it helps us save on insurance, and b) she needs more time on the roads than we can give her. Plus my nerves can only take so much. She’s allowed to test for her license in July, and she has high hopes for passing on the first try.

So yeah, it should be an interesting summer for our family!

It’s raining here, so no run for me this morning, but I’m helping out in Sunday School today so I need to get off the computer and start getting ready.

I agree, if you can’t have sour cream on your tacos, why bother!  We had storms last night that began around 8.  Fortunately, we were at the neighbors for our weekly bonfire, but inside this time, so I did not get all worked up thanks to all of the conversation and laughter with friends.  We are still having some fairly strong wind gusts, but it looks like the sun is going to shine.  Our granddaughter will be back home from college Wednesday or Thursday.  It’s hard to believe that she will begin her junior year in the fall.  I have my cargo pants from Nordstrom that you shared, ready to wear.  I’m just hoping they won’t irritate the skin cancer spot on my right shin bone!  Enjoy the get together tonight! 

  2. Have you tried Fage Greek yogurt instead of sour cream ?  It’s a lot healthier option plus a protein boost. 

  3. I love fish tacos but hate the smell of fish cooking in the house. I read somewhere that Trader Joe’s lightly breaded fish sticks make great fish tacos and oh my! I don’t think I’ve had a fish stick in 25 years and the tacos were so good! I warmed up corn tortillas, added cabbage and made an easy spicey aioli sauce with mayo and Sour cream and a little cotija cheese (it reminds me of feta). It was so good we had them twice in the same week!

    I had 4 children who headed off to college and bounced back for holidays and sometimes summers. My advice is to treat them as you would any other adult in the house and expect the same. I remember my eldest son asking me why he had to tell me where he was going and about what time he would be home after he’d been coming and going on his own for the last 9 months. My answer was because I do the same when I leave the house. It’s how a family works. He laughed and said “good point” and we never had an issue. I did not do his laundry, lol. After all, he’d been doing it for 9 months on his own!

  4. Hi Jo-Lynne! I discovered that when kids come home from college they tend to be in the habit of doing whatever they want, whenever they want, which is understandable. That sometimes becomes an issue though when you have family plans or when they get in late at night, later than you prefer perhaps. I generally just reminded my kids at the beginning of the summer that it’s respectful and considerate to let someone know if you’ll be getting in late so we don’t worry. And I’d give them plenty of heads up about family plans so they could let me know if they would be able or willing to participate or not. Of course I had to lower my expectations some too. Sometimes we had to get through a hiccup here and there before eventually settling into a healthy rhythm again. 

    But honestly, both of my kids just came home that first summer and after that they were off at internships or jobs. Enjoy! It will be a great summer, im sure! 😊

Good Morning, Jo-Lynne!  I always love hearing about your kids; my two kiddos are (I think!) the same age as your two older kids.  I have one who just came home from his freshman year at University of Nebraska at Lincoln on Friday night and a freshman in high school, who just like your daughter is learning to drive, too!  I am also looking for a driving instructor/school for her.  My son took a class where the driving instructor even took care of passing him for the driving portion of the driver’s license test!  WIN!!!  Now, if only I could remember what company that was!!!  🙂  Anyways, I really enjoy not only your fashion sense, but I also enjoy learning more about you as a person.  I’d like to think if I lived nearby I’d love meeting you for coffee and/or lunch!  🙂 Have a great Sunday!

  6. Just know once college kids come home they dont think they have to report in. Just establish that up front.

  8. We make “Jo-Lynne’s” tacos all the dang time! If tomatoes are good, we love to use fresh instead of canned. We also make this with chicken. I pull back a bit on the spice and amp up with cilantro. My family thanks you!

  9. Bohemian Rhapsody……it is a MUST see! I easily could watch it numerous times, just for the music alone. And the actor who plays Freddy: phenomenal!

  10. I agree with everything the other moms said. My kids(all 3) seemed confused by the fact that we needed to know when and where they were going and about when they’d be home. Dinner was another small issue ( how much to cook?). They are all great kids…don’t get me wrong. Enjoy having your family together this summer. My youngest is graduating in two weeks and starts her job at the end of July. I’m going to cherish every moment she is home till then(when she moves back to DC).

  12. I love hearing how much we have in common. You are right when you describe yourself as a girlfriend to share things with. 
    I too loved the American Idol season with Adam Lambert!! He was just amazing!! And I highly recommend Bohemian Rhapsody!! Wow!! I missed Saturday’s episode with Adam but I will look it up! 
    My daughter is coming home tomorrow from her first year of college. I’m sure we will all be adjusting.
