Watermelon Mojito

This watermelon version of the classic mojito is the perfect summertime cocktail!

Serves: 4
  • 2 heaping cups watermelon
  • ½ cup watermelon juice
  • White rum
  • Mint leaves
  • 3 TBS fresh lime juice
  • Optional: Simple Syrup (1/4 cup white sugar dissolved in ¼ cup water)
  • Optional: Club soda or Sprite
  1. Scoop out 2 cups of fresh watermelon and add to your blender.
  2. Measure ½ cup of the watermelon juice that was created when you scooped out the watermelon, and add that to the blender as well. Blend on high until it liquefies.
  3. Add 3 TBS fresh-squeezed lime juice, and give it a quick pulse.
  4. Taste. If the puree is not sweet enough, you can add some simple syrup. To make the simple syrup, combine ¼ cup sugar and a ¼ cup of water and heat in a small pot on the stove, stirring constantly, until the sugar is dissolved (2-3 minutes). Add some or all of the simple syrup to your puree, or reserve it until you make it by the glass and customize each mojito.
  5. Fill a glass half-way with the puree, add a handful of mint leaves, and muddle with a cocktail muddler or a wooden spoon.
  6. Add the rum (to your liking) and some simple syrup, if desired.
  7. Fill the rest of the glass with ice, top it off if necessary with some more puree, or if you like a little fizz, add a splash of club soda or sprite. Give it a stir and enjoy!
  8. Garnish with a small watermelon slice.
