MONDAY: Tuscan Lemon Chicken with rice and sautéed greens from the CSA

TUESDAY: Chicken Chili with Sweet Cornbread via Home Ec 101

WEDNESDAY: Korean Beef via Lizzy Writes

THURSDAY: Mahi Mahi with Rose Romanos Red Peppers, oven roasted potatoes and something green (waiting to see what we get from the CSA this week!)

FRIDAY: Baked Pork Chops and Brown Rice via Living with Food Allergies

SATURDAY: burgers on the grill, brussels sprouts with caramelized onion and bacon

  1. Ooh, I forgot I might have some pork chops in the freezer still. The Tuscan Lemon Chicken looks yummy!

  2. That Lemon Tuscan Chicken looks great! So this is a stupid question – Rice is gluten free? I had no idea. And with the corn muffins that you make with the Chicken Chili – do you make it gluten free? Or just not eat it? Same with burgers – gluten free rolls? OR sans roll?

    1. Oh dang, I put the wrong cornbread on there. I have a GF one I make now. And the burgers I usually eat sans rolls, but Udi’s makes a good gluten free roll. And yes, rice is gluten free. Gluten is in wheat, barley and rye. 🙂

        I’m more intrigued about Gluten Free, because I’ve had several people say recently that they feel SO MUCH BETTER after cutting it out. And that they stopped having bad cravings. We have people close to our family who are celiac and gluten-intolerant – and I would love the GF Cornbread recipe. We make this awesome Chili (which I believe is GF) – and I was scouring the web for good GF cornbread.

        Still a little nervous to make the leap – so doing a lot of research for the time being.

        1. What Jo-Lynne said! Start with yourself and take the wheat out of what you eat, before trying it with the kids. Then talk to your dh and see if he wants to try it. I think a gradual approach works better with families that aren’t in the middle of health issues.

  3. This is a delicious sounding round-up of weekly meals! Being Friday we’ll definitely have to use this plan for newt week, or maybe we’ll plan a party for this weekend and make it all now! 🙂 Thanks for the recipes and great job on the creativity! 🙂

  4. In the last month we found out 2 of our 3 daughters have wheat sensitivities, and this week discovered I have a wheat sensitivity (as well as my mom and 2 sisters). We are fine with other grains and organic hard red wheat. I would encourage anyone who is wondering if they have a gluten sensitivity to get it checked out to know for sure if it is gluten vs wheat! Our doctor says he is convinced that it is the GMO wheat that many people are developing sensitivities to due to the fact that it has been altered and the body has a harder time breaking it down. That being said, it can be hard to find just ‘wheat-free’ recipes and blogs, so I have been looking at it all! We love pasta and breads, so we need a fresh ideas and suggestions for our meal plans. 🙂 Thanks!
