{Gluten Free} Weekly Meal Plan 07.02.12

Gluten Free Meal Plan via Musings of a Housewife

I’m a day late posting this week, but I didn’t want to bail because I desperately need a meal plan to keep my sanity. Plus, as I mentioned last week, I need to get the carbs OUT, and that means making sure I have stuff on hand to make good low-carb meals.

MONDAY: organic, uncured hot dogs with baked beans, cut up veggies and fresh fruit

TUESDAY: grilled, marinated shrimp with roasted kohlrabi and sautéed swiss chard

WEDNESDAY: gourmet hamburgers (sans bun) with caramelized onions, bacon and cheddar cheese, along with deviled eggs and whatever everyone brings (hoping to have a casual get-together although we’re still working out the details)

THURSDAY: rosemary baked chicken with zucchini noodles (I just ordered this Kuhn Rikon Julienne Peeler with Blade Protector) and roasted carrots

FRIDAY: dinner out! woo!

SATURDAY: korean beef and broccoli (hat tip to Practical Paleo)

  1. I think you’ll like the zucchini noodles. I’ve been doing that for a while. Definitely better with real butter and a little salt and pepper. My husband even requests them now, too! 🙂 I’m wondering if I can take advantage of their abundance this summer and freeze a bunch…I may have to try a small serving first to make sure they don’t get mushy. 🙂
