Weekly Menu 04.01.13 #glutenfree #realfood

It’s April 1st! We made it through the worst month of the year! WOO! I can’t tell you how happy I am to say good-bye to March. I will be celebrating all week.

MONDAY: Ham and Asparagus Quiche (We have a ton of leftover ham and asparagus from Easter dinner. I am going to modify this recipe to make it gluten-free; if it’s good, I’ll be sure to share it!)

TUESDAY: Balsamic Braised Short Ribs and Candied Carrots, both from Practical Paleo

WEDNESDAY: Split Pea Soup (again with the leftover ham; I saved the bone too!)

THURSDAY: Tuscan Lemon Chicken with sautéed swiss chard (looks like it might be a nice day for grilling!)

FRIDAY: Mexican Lettuce Wraps (I still have a few roasts in my freezer from the side of beef we bought a year ago, and we’re all sick of pot roast so I thought these lettuce wraps would be nice for a change!)

SATURDAY: We’ll be in Philly for a play that afternoon so hopefully we will eat out!
