Healthy Breakfast Ideas: Cottage Cheese Breakfast Bowl

With the kids at home this summer, my routine has been in a bit of an upheaval. Don’t get me wrong, I love having this time with them, but I’ve had to adjust my habits and schedule. One thing that has changed is that we’re eating breakfast much later than usual, and we all eat at different times. I still get up at my usual 6 AM, but the kids often sleep in until 8 or 9. We pretty much all fend for ourselves for breakfast, so I like to have a variety of things on hand that anyone can throw together when they’re ready to eat. Of course, I’m always looking for new healthy breakfast ideas.

I try to eat protein for breakfast, but I get tired of eggs, and my kids have never been big fans of them. Cottage cheese wasn’t on my radar until Friendship Dairies invited me to share about their Super-Duper Totally Fantastic Superfood Mix-in Sweepstakes and make some fun new recipes with their cottage cheese and Superfood Generator. I enlisted the help of my littlest comrade, R. She’s my most adventurous eater, so I figured she would be my best partner in this experiment. First I showed her the Superfood Generator on the Friendship Dairies website.

The Friendship Dairies Superfood Generator is a fun, inspirational tool that helps you discover the variety of possibilities with cottage cheese mix-ins and their nutritional benefits. You can choose ingredients from categories like crunchy, veggie, herbs & spice, or select a food based on its benefit, like antioxidant, potassium, or fiber.

We had a blast coming up with all sorts of different combinations. I would have never thought of half of these ideas on my own. After you choose your cottage cheese and your mix-ins, it shows you the result, which looks like this.

After we came up with a few combinations online, we set out to try it ourselves. I set R up with a bowl of cottage cheese and a variety of ingredients, and she went to town.

We decided not to stop at three mix-ins. Our favorite recipe actually has blueberries, kiwi, dried cranberries, almond slivers, pumpkin seeds, and a drizzle of raw local honey for added sweetness and nutritional value.

I love this breakfast because it’s packed with protein, vitamins, and antioxidants. It has a pleasant crunch from the nuts and seeds and just enough sweetness to make it seem like a treat. Plus, PRETTY!

  1. Totally a cool idea. We’re trying to increase the protein around here, too. One of my quick go-tos is a slice of Dave’s Killer Bread (or anything gf would work), toasted with peanut butter and a handful of blueberries. We also do banana slices or strawberry slices, but kiwi would also be good. Off to check this out!

  2. As I mentioned on FB, I learned a LOT about protein during a 30-Day Protein Challenge, so cottage cheese is on my radar…but I’ve been boring with it. Your post and links to the giveaway (WHICH I AM DYING TO WIN B/C MY BLENDER IS NOT VERY GOOD!!) have zillions of ideas to mix it up (see what I did there?).

  7. I’ve never been a fan of cottage cheese because of the texture. Wouldn’t blending it a bit prior to adding fruit and nuts work?

    Had it this morning, but replaced cranberries with dates and almond+seeds with a mix of nuts (almonds, walnuts, cashew nuts, hazelnuts). What wonderful colors and tastes !

  9. My diet, prescribed by my naturalist, includes proteins like beef, chicken, and deep-sea fish. Not wonderful for breakfast. Breakfast proteins include eggs and cottage cheese. I’m reacting to eggs. So cottage cheese it is. I was loath to try it (I’ve never been really big on it). But your post inspired me, and it’s been great. Thanks very much for this.
