EASY Weeknight Dinner Recipe: Kale Mash

I’m making it a goal in 2015 to find more healthy and EASY weeknight dinner recipes. I have decided that I tend to cook very labor intensive meals, and when life gets busy, homemade meals get pushed aside because it’s just too much trouble. But home cooking doesn’t need to be labor intensive.

When a friend sent me this recipe for Kale Mash, I knew immediately it was going to be a new family favorite.

Thanks to our CSA membership, my fridge always seems to be overflowing with kale. We like kale, and I have several ways I cook it in an attempt to maintain some semblance of variety with our greens, but this one was new to me. What I really like about kale mash is, it slips the kale into one of my kids’ favorite foods — mashed potatoes!! They claim you can’t even taste it, which is a bonus for anyone who has people in their household who are resistant to eating greens.

Even better, this dish is SUPER easy to make. You just cut up the potatoes, dice the onions, and tear the kale apart (discarding the tough ribs and stems.) Then you throw it all in a big stock pot with a bay leaf, cover it with water, add salt and pepper and let it boil away.

I made a few modifications to the original recipe. For one thing, I recommend using WAY more than the “pinch of salt” this recipe calls for. I only used one onion instead of two, and it was plenty. Finally, a pound of kale is like a whole harvest! I only used one bunch.

Oh yeah, and I doubled the butter. Because . . . butter. Duh.

When the potatoes are soft, you drain the whole pot, add butter and milk, mix it up and serve with kielbasa on top. (You can steam the kielbasa while the potatoes are cooking.)

Kale Mash Recipe

This popular Dutch dish is comfort food at its finest. Your family will love how delicious it is, and you will love how easy it is to prepare!
Ingredients
  • 3 lbs potatoes
  • 1 onion
  • 1 bay leaf
  • 1 bunch kale
  • 1 teaspoon salt + more to taste
  • 1/2 teaspoon ground pepper
  • 2 lbs smoked kielbasa
  • 1/2 cup milk
  • 4 tablespoons butter
Instructions
  1. Peel potatoes and cut into quarters, peel and dice the onions, clean the kale and tear off the leaves, removing the tough ribs and stems.
  2. Place the potatoes, onion, kale, bay leaf, a teaspoon of salt and just enough water to cover all in a stock pot. Cover and boil gently for about 25 minutes.
  3. Meanwhile steam the smoked kielbasa for 10 minutes or until heated through.
  4. Remove the bay leaf. Drain the vegetables and mash gently. Add milk and butter and stir until just mixed. Season with salt and pepper to taste.
  5. Serve with sliced kielbasa on top or on the side.
  6. For an extra yummy treat, top with crumbled cooked bacon.

  1. That looks very good, gonna have to give it a try. Hubby just discovered kale chips (hello where has he been) and thinks all things kale are the bomb right now. Thanks for sharing. 🙂

    p.s. I know the blog has been undergoing some changes but I find the print to be very light and hard to read. Is this the norm now?? Gonna have to go get some bifocals to keep reading it. lol

    1. ACK! you are the second person to say that. I will work on it. 🙂 I really love the finer fonts, but people always complain. I thought this was big enough and dark enough in color… but I guess not. 🙂

  2. This looks amazing! I have the same problem, labor intensive meals and when I don’t feel like all that prep and fuss, …. I haven’t liked kale yet but I’ve always included those awful stems and spine. I feel a little silly now, never thought to remove them. Will have to give this a go soon!

    1. Oh, yes, ALWAYS cut out the stem/spine! And if they are really tough, you can tear the leaves off around those little stems, but I usually don’t have to. I like the curly kale.
