Menu Plan Monday

Here we go again! I can’t believe how quickly Monday comes around. I’ve taken to keeping my calendar clear on Mondays, and it’s amazing what that’s done for my mental health. Have you ever tried it? If you hate Mondays as much as I hate Mondays, you should give it a try.  Having the day to recuperate, reorganize, and plan my week helps me feel more in control and at peace with the busyness.

Today’s Goals:

1. Bake bread for the week
2. Make meal plan for the week
3. Make shopping list
4. Grocery shop
5. Write 4 posts for Eat Local Philly and schedule
6. Write 2 posts for Therapon and submit for review
7. Go running

And not necessarily in that order. If I leave running for last, that’s a sure guarantee it will never get done. (That’s a sure guarantee as opposed to any other kind. Heh.)

Thanks to this post, I got to cross two items crossed off my to-do list, just like that!  SCORE! (I should have added this post to the list simply so I could get the satisfaction of crossing three items off my list instead of just two. Yes, these are the mind games I play with myself.)

Here’s my menu plan for this week. As I wrote this out, I also made my shopping list. I’m trying to make the most of the fresh produce that is still available in our area.

Menu Plan:

MONDAY: Broccoli and Cheese Soup with freshly baked homemade bread
TUESDAY: Tilapia Parmesan with Braised Winter Squash* and collard greens
WEDNESDAY: Chicken Scallopine and roasted brussels sprouts
THURSDAY: Beef Burritos (I’ll make 2 batches and freeze one for future.)
FRIDAY: Lentil Vegetable Soup (This makes a TON; I’ll definitely be able to freeze half for dinner another week.)

  1. I wish I could keep Mondays clear! That’s such a great thing to do. Something always seems to come up.
    And dinner sounds yum! I’m coming over 🙂

  2. I’ve made Barefoot Contessa’s Lentil soup several times – I absolutely love it. The kids, however, would gladly take a pass! Sometimes I wonder why I didn’t cook like this before I had kids – perhaps I would have gotten my fill of really good food and wouldn’t mind the fact that they eat almost nothing!

    1. My kids actually love it – especially my son. I’m kind of over it, frankly. I prefer soups with meat in them. 🙂

  3. Oh, I agree, having a clear Monday is so helpful. And, thanks to your menu list I now have some good ideas myself! But, I must ask you, soup and bread is enough to fill up your family?? That would be an appetizer around here…ha.

      1. Just wait until your boy hits a big growing spurt and you’ll see what I mean!

        Speaking of soup, two of our very favorites are Ina’s Mexican Chicken and Paula Deen’s Beef Vegetable. Both are delicious!

  4. I am making carrot, squash, and apple bisque for dinner. I also just finished making your homemade bread recipe, it is our favorite! I make two loaves for sandwiches and 2 loaves as cinnamon roll bread! It’s my kids favorite treat! 🙂

    1. No, unfortunately when I went to make it, my camera was out of battery. Bleh. I’ll make it again soon, though. It’s one of our faves. 🙂

  5. Hey Jo-Lynne! I have been a long time lurker (for about the past year, I think). Just wanted to let you know that you have been inspiring me to me in terms of meal planning and the whole foods diet. I’m actually making the “chicken in a pot” recipe tonight that you posted several months ago. It’s become a favorite for my husband and myself. I’m trying to get him on board for the whole foods diet; so I’m doing it slowly to ease his pain (haha). I love your blog and figured I’d finally say hello. Keep up the good work!

  6. Two of the four loaves I roll out into a circle, spread with butter and sprinkle with cane juice crystals, sucanat, and cinnamon. I roll it up, tuck the sides in, and place in a bread pan. It rises a second time, then I bake it the same temp and time as the regular loaves. This bread is heavenly warm out of the oven with butter or toasted with butter for breakfast! Plus, it makes the house smell delicious! I have four boys and I can’t keep enough of this bread around! 🙂

    1. I had just put 4 loaves of bread into pans when I saw this and I grabbed one back out, rolled it out again, and smeared it with butter and cinnamon sugar, and rolled it up again. Can’t wait to see how it tastes! 🙂

  7. Way to go!! I love meal planning. It makes going to the grocery store so much easier. And if we don’t want what we planned for on a specific day, we just switch it around.

  8. I was jUST thinking of you today as I watched Kelly make her bread – if you were still home making bread. And here is your post! 🙂

    I loosely meal plan. We do have an extra child for a week next week so I have next week nailed down cuz I know I have to (with a teen who actually EATS, vs mine who is a skimpy eater).
