{Gluten Free} Meal Plan 4.11.11

The weather’s finally looking more spring-like here in Philly, and I’d love to say that I’m grilling every meal this week, but I’m rather limited by what I have in my freezer, so it looks like I’m only using the grill once. I need to stock up on chicken pieces and burger meat and steaks.

I’m feeling like I’m getting into a bit of a rut. If you have any suggestions, feel free to leave them in the comments. Got a great recipe you think I should try – (whole foods, gluten free of course) – link away!

So here’s what’s on the docket.

MONDAY: Crustless Chard Quiche (I have a leftover bunch of swiss chard in my fridge, and I’ve been dying to try this.) The kids won’t all be into it, and it’s not super filling, so those who want can have leftovers from the weekend.

TUESDAY: Pan fried pork chops (I didn’t get to this last week, but I picked up pork chops at the farmers’ market on Saturday, so I’m set!), brown rice, collard greens

WEDNESDAY: London Broil using Mary Kathryn’s method, although I may do it on the grill rather than in the oven, herbed new potatoes, and a fresh veggie

THURSDAY: Chicken Enchiladas with a salad. I miss these enchiladas, and I haven’t seen gluten free flour tortillas, so I guess I’ll try them with the corn ones and see how it tastes.

FRIDAY: Philly Sausage and Peppers with a salad. I probably should do the sausages on the grill instead, but I love them cooked this way and I hate to mess with a good thing. (I use nitrate free, uncured sausage from Applegate Farms. Here’s why.)

  1. mmmm. all this sounds so yummy!
    i might suggest a bit of fish. i love to take tilapia and pan sear it in olive oil with garlic, lemon and some light blackening spices (or whatever spices i grab, really). as i flip it over for side two, i throw fresh spinach beside it to wilt/braise and serve it on top of the fish. yumm! or i dip it in egg and dredge it through seasoned finely chopped almonds. pan sear and yummmm!
    i also really love pan seared medium rare tuna steaks with mango salsa.

  2. I’m coming over everynight this week for dinner, so set an extra place for me! We have baseball tonight with both boys so I hate to say this but tonight is grilled cheese with tomato soup or a salad. I know I put forth such an effort. Tomorrow night is pulled pork sandwhiches cooked in the crock pot. YUM!

  3. Do you have Trader Joe’s there? I can’t be 100% sure but I think I’ve seen gluten free tortillas there…
    I love your enchilada recipe, btw!

    1. I looked there yesterday. Couldn’t find them. 🙁 They had corn, but they were very small, and I think corn bothers my tummy anyway. I guess I just need to give up on Mexican food. *sad panda*
