{Gluten Free} Meal Plan 4.25.11

Better late then never, right? This week it’s all about keeping it simple because as spring is now in full swing, so are our schedules!

MONDAY: Easter dinner leftovers: ham, mac-and-cheese, and fresh spinach sauteed lightly in olive oil.

TUESDAY: Ina Burgers on the grill, fresh raw veggies and potato salad, if I get ambitious.

WEDNESDAY: Chicken Noodle Soup (from frozen – leftovers from last week)

THURSDAY: Salmon Cakes, rice cooked in chicken stock, and roasted brussels sprouts.

FRIDAY: Pizza Night (I’m going to pick up this gluten-free pizza from a place near a friend’s home that I’ll be visiting that morning.)

SATURDAY: I dunno. I STILL want to make that Shrimp & Grits recipe I keep talking about, but it never seems to happen.

  1. If you make shrimp and grits, I’m coming over! I have been wanting to try that recipe for a while. I don’t really know what’s stopping me either.
