Menu Plan Monday

I’m getting a late start this morning, but it’s a start, nonetheless! I always have a hard time getting back on track after being away, but I’m pleased to say that so far today I have 4 loaves of bread in the oven, 2 kids off to school on time, breakfast has been made and cleaned up, and my menu plan has been made. WHEW!

My menu plan this week is nothing very new. You will see that there are a lot of repeats. Some are repeats because I never actually made them when they were planned, and some are repeats because I need to diversify my meals a bit. I’m currently on a search for more meals made with pre-cooked chicken. If you have one, I’d love to hear about it!

MONDAY: leek and asparagus frittata, salad

TUESDAY: meatloaf, baked potatoes, brussels sprouts with caramelized onions

WEDNESDAY: salmon cakes, oven roasted asparagus

THURSDAY: leftovers for the fam (I’m going to Morimoto’s for a blogging event. WOOT!)

FRIDAY: We’ll be eating at the Phillies game.

SATURDAY: burgers or steaks on the grill, weather permitting

  1. My family enjoys Alton Brown’s Curry Chicken Pot Pie on foodnetwork.com. It is easy, and I prepare it in the morning then bake it for dinner that night. Another favorite for my family is Summer Tortellini Salad from SouthernLiving.com.

    1. YES! At least some of them do. If I roast them to perfection so that they are crispy and browned, my son loves them. I can’t remember if my daughters eat them or not, I think my younger one does. But then, she eats almost anything, lol.

  2. Jo-Lynne, you are inspiring me to menu plan. Its my number one task for this summer to get organized with our meals. Dinner time is so chaotic and our food bill is out of control.

    1. I found some at Trader Joes without bones, but frankly, the stuff with bones (I got from a local whole foods type of store) tasted better so I may go back to that.

  3. I have two pre-cooked chicken recipe suggestions for you. I posted both of these on my blog this winter.
    1. Chicken ‘n’ Spinach Bake: https://www.toothwhale.com/toothwhale/2010/01/chicken-n-spinach-bake.html. This is a pasta bake with rigatoni, onion, spinach, chicken, tomatoes, cream cheese and mozzarella.
    2. Easy Mulligatawny Soup:
    https://www.toothwhale.com/toothwhale/2010/01/easy-mulligatawny-soup.html. It’s a simple version of a classic curry-flavored Indian soup. Really, the curry flavor is very mild and you mostly taste all the nice ingredients — apples, carrots, raisins, chicken and veggies.

  4. Pampered Chef has this great recipe with cooked chicken. I think it is corn tortillas, enchilda sauce, cream cheese, cilantro, cheddar cheese and cooked chicken. You dip the tortillas in the sauce and then layer that, mix the chopped cilantro with the cream cheese and layer that, then the chicken, then the cheddar, and then start the next layer. It can even be heated until all melty in the microwave.

  5. For precooked chicken, we love any form of quesadillas! Easy, too. The pioneer woman just posted some pineapple bbq chicken ones a few days back that I’m sure you could alter to use shredded bbq chicken. They look so yummy to me and are on my “to try” list. I’ve also added some chicken and spinach to the cheesy bow ties recipe (link is somewhere on my blog) and that was good.
