Menu Plan Monday

This is a Monday morning if there ever was one.  We are all getting a slow start to the day.  I’ve been up half the night with an allergy attack, and we’re all just plum wore out.  So here I sit, breathing out of one nostril, trying to ignore my pounding headache, and guzzling coffee like in hopes that it will cure what ails me.

It was a full weekend, starting Thursday night with our Morimoto blogging event.

Then Friday night I went to a Phillies game with my boys where we slaughtered the Red Sox.  Good times.

Saturday was my my ill-fated trip to NYC for the Hebrew National picnic.

And finally Sunday was filled with church in the morning, a birthday party in the afternoon, and an impromptu get-together with friends in the evening.

PHEW!  I need a vacation.  Wait.  I just had one.  Durnit.  Guess I’ll just have to suck it up and face the week head-on.  And I might as well start with a little menu planning session.  At least that way, if I get nothing else accomplished today, I’ll know what we’re eating this week.

MONDAY: Herbed Chicken Rosé, herbed new potatoes, oven roasted asparagus

TUESDAY: spaghetti with meatballs, side salad

WEDNESDAY: burgers on the grill, raw veggie platter, fresh spinach (blanched and sauteed)

THURSDAY: Chicken Enchiladas, side salad

FRIDAY: Linguine with Shrimp Scampi, steamed green beans

I’m not sure what the holiday weekend has in store for us, so I’m leaving that unplanned for now.

  1. Look at you girls in your “Movie Star” shades!! Looks like you had fun despite the crazy trip! Oven roasted Asparagus = YUM! Can’t wait till it goes on sale again here.

  2. Oh yummy! I love roasted asparagus! I do something similar for meal planning but it’s usually more vague. I pull out of the freezer a couple of days in advance what we are having for the week.

  3. I love fresh spinach.

    We had a busy weekend too, but I had to clean house because friends were coming over, but then they didn’t get to because one of their daughters was sick. 🙁 But we did get to enjoy some awesome pork kabobs off the grill.

    And that reminds me, any tips to where I could find an awesome Caribbean jerk marinade recipe. The stuff in the bottle I used was definitely not healthy.

  4. O.K., I’m freaking out just a little here because just last night–I kid you not!–I figured out our menus for the week and here it is (not as detailed as yours, but the coincidences are freaky!):

    Monday – grilled chicken
    Tuesday – Spaghetti and meatballs
    Wednesday – pork tenderloin
    Thursday – fajitas w/ black beans and rice
    (Didn’t get to Friday because Friday is payday and a girl can always hope . . .)

    Every day, except for Wednesday, is almost the same as yours. Weird, huh?

  6. Thanks for the weekly menu plans! I have started doing my grocery shopping for the week on mondays and I always check your site just before I go to see what you have planned for the week. I think I will try the linguine with shrimp recipe, it sounds awesome!
