Weekly Meal Plan 01.09.12

I know I’ve been saying this every time I post a meal plan, but this time I MEAN IT. I am back to meal planning every week. It’s another of my New Years, ahem, goals. Dinner suddenly becomes so stressful when there is no plan in place. My poor husband gets stuck stopping at the store every day to bring home half the components that I decide that I need (bless his heart, he never complains about this) and then we don’t eat until 8:00 PM.

No more. I have to get more disciplined. I am also adding Saturday night to my meal plan because I’m tired of scrounging on the weekends. You’ll notice I’m linking off to a lot of other blogs this week. I’m sick of eating the same 10 meals over and over, so I’m trying some new ones this week!

This Week’s {Gluten Free} Meal Plan

MONDAY: Chicken With Olives over rice with roasted brussels sprouts

TUESDAY: Beef Stroganoff, Gluten Free and for the Slow Cooker with a spinach salad

THURSDAY: Salmon Cakes with steamed brown rice and Broccoli Casserole (recipe to come)

FRIDAY: Company’s Coming Lasagna (even though there’s no company coming) with a Caesar salad. I make this gluten free by using GF lasagna noodles.

SATURDAY: I’m thinking of trying to adapt this Chicken and Broccoli Casserole into something . . . healthy. You know, with full-fat dairy and a homemade roux in lieu of cream-of-chemical soup. If you have one, let me know so I don’t reinvent the wheel!

  1. Looks like a great meal plan! Funny thing, just today I was thinking about making Broccoli casserole soon (we grew up on that made with ‘Miracle Whip’ of all things, blech!).

  2. Just curious – do your kids have many afternoon activities that impact your cooking? I try to cook everyday, but I end up doing super easy meals because we are running to karate or ballet or piano all week long.

    1. We have some but they don’t seem to impact my cooking too much except during baseball season, and then all bets are off. Fortunately at that time of year, we can rely on the grill. 🙂

      Most of our after school activities are immediately after school, so I have to pick them up at 4:15 or something like that. I am almost always home by 4:30. Also? We eat late. I often don’t even start dinner till after 5pm. It’s nothing for us to eat at 7 or 7:30.

  3. oh, i SO need to do this too!!! i’m such a planner with some things, but so not a planner with others…meals would fall into the latter category. i want to be that person who always has a great meal on the table for dinner, not the one who rushes around haphazardly wondering what we’ll eat and it’s almost 9 o’clock!!!

  4. That link I sent you a while ago for broccoli casserole did not use any cream soup. You make your own simple white sauce. It is delicious!

  5. I was just sitting here working on my plan when your e-mail came it.. thanks for the inspiration! I’m going to try your soup recipe and I’m adding salmon cakes to our week! I’m using cozi.com to plan and print my meal plan and our family schedule. Cozi really helps me to enjoy the process and I’m much more organized! Hope it’s okay to share that!

  6. I may have to try the salmon cakes just to mix it up a bit in our house. I also like the sounds of the sausage, white bean, and kale soup. I made a chicken and wild rice casserole over the weekend that does not have any cream o’ chemicals – it was delicious!

  7. I am not Gluten Free, but many of my in-laws are. Here is a GF cream soup recipe I got from my sister-in-law to use in casseroles.

    GF Cream Soup Base
    Use in place of one can cream soup (mushroom, celery, chicken)
    1 Tbsp butter
    mushrooms ~4-5 med. washed and diced
    sauteed together in sauce pan over medium heat

    Then add the rest and wisk until thickened:
    1/2 cup 1% milk
    1/2 cup heavy cream
    (can use 1 cup milk, lactose free, almond, soy, etc. instead of the 1/2 cup milk and 1/2 cup cream)
    1 Tbsp cornstarch
    1 tsp chicken soup base

  8. Your menu looks much more inventive than mine (I mean, Kale? I haven’t yet tried it, but it’s on my list to try, as is chard and collard greens. I assume it’s kinda like spinach)! I am getting back to menu planning, too. It’s hard, because my husband is never (ok, rarely) home before 6:30, and the kids need to eat before then. Heck, the baby goes to bed at 6:30! But, in the end is saves me stress, time, money, etc. I’ve made PW’s Chicken with Olives before (a few substitutions based on what I had at home, as I remember) and it was really good. I need to make it again!
