Weekly Menu Plan 07.15.13

This week’s menu theme is easy and low carb! I’ve packed on a few pounds, so I’m trying to lighten it up!! Plus it is going to be 210 degrees here in Philly this week so I want recipes that don’t take a lot of energy — mine or the oven’s! Also, it is fresh local sweet corn season. YAYAY!

MONDAY: pulled pork in the crock pot (the family can take it on a roll but I’ll just eat mine with a fork), Baked Swiss Chard Stems, and fresh cut-up veggies

TUESDAY: Herbed Chicken Rosé with mashed cauliflower and steamed green beans

WEDNESDAY: Fried Fish with Lemon Garlic Pesto (recipe to come), dill fingerling potatoes and Sautéed Spinach

THURSDAY: Kansas City Style Spare Ribs (recipe to come) with Collards and grilled corn on the cob (I didn’t get around to making this last week so I’m including it again; this time I have the ribs already in my fridge so I need to make it!)

FRIDAY: dinner out with my man!

SATURDAY: Hamburgers on the grill with blue cheese, grilled corn on the cob and some sort of fresh veggie (whatever we get from the CSA on Friday!)

  1. Hope you had a great weekend Jo-Lynne! Looks like a yummy meal plan this week 🙂 It’s been a while since I’ve been able to participate, but I’ve just gotten back into the kitchen after a rough 1st trimester – so I hope to visit more frequently now!! 🙂

  2. Wow this looks like an amazing meal plan!!!! : )

    I need to start being more creative with my meal plans like this! I’m a creature of habit for sticking to basics like chicken and broccoli just to make things easier on those busy work days! : / This shall be a new goal of mine! : )
