Somehow last weekend got away from me . . . I have no idea why. I mean, I ran a half marathon and all, but I didn’t mean to neglect my meal plan. Sorry if you were looking to link up and couldn’t find it! This week I’m traveling so I wont’ be cooking much. I wish I was one of those women who managed to leave the fridge stocked with dinners for the nights that I’m gone, but I’m not That Mom.
At any rate, here are some suggestions for meals this week. You know, the ones I might make if I were That Mom.
MONDAY: beef brisket with collard greens
TUESDAY: citrus & herb whole roasted chicken
WEDNESDAY: Baked Asian-Style Salmon with Bok Choy
THURSDAY: Three Cheese & Ham Pizza with Rose Romano’s Italian Peppers and a salad
FRIDAY: Friday Night Chili with Sweet Cornbread a la Home Ec 101
SATURDAY: Coconut Curry Chicken a la Jules (I will be home on Saturday and hope to give this recipe a try!)
