I keep moving through my Summer Dinner Menu Plan — mapping out the entire summer was the best thing I’ve ever done for my meal planning success! It took a few hours of going through my favorite cookbooks and writing it all down, but now I just have to find the next week and plug it in! And I’m not repeating meals nearly as much as I usually do. I’m enjoying the variety. Here’s what is up for this week!

MONDAY: Grilled Marinated Shrimp and Zucchini Noodles with a side salad

TUESDAY: Jerk Flank Steak, Roasted Sweet Potato Fries with Rosemary & Garlic, Simple Sautéed Spinach

WEDNESDAY: BBQ Chicken on the grill, corn on the cob, salad

THURSDAY: Mexican Lettuce Wraps

FRIDAY: takeout

SATURDAY: Vacation!
