FRIDAY: Friday Night Chili with corn muffins (trying a GF version this week! will let you know how it goes)
SATURDAY: Herbed Chicken Rosé with sautéed swiss chard and baked new potatoes

We love zucchini pasta that way, too! I do a dairy free alfredo sauce that’s similar, but I’m also loving it with garlic, tomatoes and mushrooms in a lighter sauce right now, too.
It’s so helpful to read through someone else’s gluten free menu ideas. Your quinoa pilaf sounds like something we would enjoy. Nice makeover… thanks for hosting
