Weekly Meal Plan 03.03.13 #glutenfree

I have to admit, I was a bad, bad meal planner this week. We didn’t eat a single meal that I had on my menu!! We still ate well, but I ended up cooking with whatever I could throw together quickly, so you’ll see some repeats on this week’s meal plan.

I’m trying to clean out my freezer. We bought a side of beef last spring and I’d like to finish it off so we can stock up again. I’m down to one jar of chicken stock, a flank steak, a few roasts, liver and tongue. Oh yeah, baby! We’ve also eaten all our chicken. It’s high time for a trip to my favorite Amish farm.

MONDAY: Crustless Italian Sausage Quiche with a side salad

TUESDAY: spaghetti for the kids (We’re going to a Sixers game, where I’m sure I’ll indulge in something really nutritious like nachos… whatever. You only live once.)

WEDNESDAY: Red Wine Marinated Flank Steak with mashed potatoes and Swiss Chard

THURSDAY: Oregano Chicken with rice and Roasted Broccoli & Cauliflower

FRIDAY: Beef Brisket in lettuce roll-ups with cheese and sour cream

SATURDAY: takeout

    1. Hi Janet. I would highly recommend NOT using a CAPTCHA plugin. It is so frustrating to commenters. There is a plugin called Akismet that should help with spam. And if you want some type of screening process, try GASP – it makes the reader check a box to say they’re not a spammer. Much less frustrating than trying to read a CAPTCHA.

  3. Hi Jo-Lynne, love you site! I just started on a gluten free diet 5 weeks ago, wow! what a difference. It has been so long since I have had an appetite, it’s so nice to be able to eat again. I was dairy free and soy free but then discovered wheat was also bothering me. ugh! Great recipes too. I will share some of the recipes I have tried and made on my own.

Our family is now going to be doing dairy free as well as gluten free for dinner, due to my daughter’s elimination diet (trying to figure out the trigger of her stomach aches) so my meal plans will be even MORE helpful to you!
