I have to admit, I was a bad, bad meal planner this week. We didn’t eat a single meal that I had on my menu!! We still ate well, but I ended up cooking with whatever I could throw together quickly, so you’ll see some repeats on this week’s meal plan.
I’m trying to clean out my freezer. We bought a side of beef last spring and I’d like to finish it off so we can stock up again. I’m down to one jar of chicken stock, a flank steak, a few roasts, liver and tongue. Oh yeah, baby! We’ve also eaten all our chicken. It’s high time for a trip to my favorite Amish farm.
MONDAY: Crustless Italian Sausage Quiche with a side salad
TUESDAY: spaghetti for the kids (We’re going to a Sixers game, where I’m sure I’ll indulge in something really nutritious like nachos… whatever. You only live once.)
WEDNESDAY: Red Wine Marinated Flank Steak with mashed potatoes and Swiss Chard
THURSDAY: Oregano Chicken with rice and Roasted Broccoli & Cauliflower
FRIDAY: Beef Brisket in lettuce roll-ups with cheese and sour cream
