Well, hello! It’s the first meal plan of 2014! Maybe this year I will be better at actually USING my meal plans! Ha! I still like the exercise of having a plan, but I admit I don’t use my plans as much as I should. But I’m pressing the reset button on meal planning and making a concerted effort to do better — not just with dinners, but also with our breakfasts and lunches, which is really where we tend to fall off the wagon in our healthy eating initiative.
So! With that. Here’s what I’m planning this week. It is cold and snowy here in the Northeast, so I’m in the mood for comfort food.
Meal Plan 01.08.13
MONDAY: Roasted Chicken with potatoes and carrots
TUESDAY: Sausage Kale Soup with dinner rolls (GF for me!)
WEDNESDAY: Baked Asian-Style Salmon with Roasted Broccoli
THURSDAY: Fall Quinoa Pilaf (it’s not fall, but what the hey. this sounds good to me!)
FRIDAY: Chicken Noodle Soup (using leftover chicken and chicken stock from the Roasted Chicken on Monday)
SATURDAY: leftovers
