We are on vacation this week! We rented a house in the Poconos and we’re looking forward to kayaking, sailing, and doing a lot of sitting by the lake, soaking up the sun. Of course, it would help if the rain would stop. It’s kind of a dreary way to start out the week, but the rest of the week looks gorgeous so I’ll take it.
Meanwhile, my summer master meal plan is saved to my computer at home and I didn’t have the forethought to put this week’s meal plan post together. We won’t be sticking to it up here, so I will just share what I already know we are making. We’re keeping it easy!
MONDAY: Teriyaki Salmon (I’m just using a storebought teriyaki sauce – I bought organic to assuage my “real food” guilt, ha!! but here is a teriyaki marinade recipe if you want one) with fresh veggies and steamed brown rice
TUESDAY: pulled pork tacos
WEDNESDAY: Gourmet Hamburgers on the grill with deviled eggs and raw veggies
THURSDAY: Tequila Lime Chicken with fresh steamed veggies
FRIDAY: dining out
SATURDAY: pizza takeout (this is the day we travel home so I doubt I’ll be cooking anything!)
