I’ve taken a few weeks off from meal planning over the holidays, but I’m ready to get myself back on the wagon! I’m tired of piecemealing and grocery shopping almost every day just to get thru the next meal. Plus, I’ve been under the weather all weekend, and I need to some good, nourishing food to get my energy back. Here’s what I’ve got planned. Hope I can make it all happen!
MONDAY: Mahi Mahi with Rose Romanos Peppers, rice and a salad
TUESDAY: Beef Stew
WEDNESDAY: Rosemary Baked Chicken Thighs with mashed potatoes and Roasted Broccoli
THURSDAY: Pan Fried Pork Chops with mashed potato pancakes (using leftovers) and Sauteed Carrots
FRIDAY: Jambalaya Pasta with Penne, Chicken, Shrimp and Andouille (recipe to come) and a side salad
SATURDAY: Leftovers

Yum – I’ve got to try those rosemary chicken thighs. There’s a great big rosemary bush right outside my husband’s home office and I’m always looking for new ideas to use it!
Yes, so easy!!! And delicious too. My neighbor gave me that idea. And that reminds me, I want to plant some rosemary.
Sorry to intrude but…rosemary and chicken? Does that really work? Isn’t it a bit too…how to say it…sharp?
And yes, I am a man and a bodybuilder, but I love to bake and cook. Starting though :))

Ha ha, oh can I relate to the limping from one meal to the next, grocery shopping every day! Thank you for offering us all a fresh (organized) start. It all sounds great, and my husband will be excited about the pan fried pork chops and potato pancakes.

Yeah, sometimes with all this meal planning, I forget about the basic no-recipe-needed meals that I used to rely on. I can’t go all out with fancy schmancy every night. It gets tiring. 🙂 Thanks for your encouragement!
