This week I’m focusing on quick and easy meals that don’t take a long time to prepare. I’m also trying to eat up food we have in the house, so I can save on our grocery bill. It’s the end of the month, can you tell? The budget is getting tight, especially after my husband and I took a much needed but very spontaneous (read: not in the budget) date night last Saturday night.
Menu Plan Monday
MONDAY: Spaghetti (gluten-free noodles, of course) with meat sauce and a side salad. I’ll make this tomato sauce and add ground beef to it.
I now use Bionaturae Tomatoes exclusively because it’s important to me that my tomatoes do not come in cans due to BPA concerns. I keep my pantry stocked with these tomatoes and use them any time a recipe calls for tomatoes or tomato sauce. Bionaturae also makes tomato paste in small glass jars.
TUESDAY: Leftovers (I won’t be home for dinner, so it has to be something easy-peasy.)
WEDNESDAY: Chicken Stir-Fry over rice. Everyone loves it, it goes together quickly, and I have chicken in the freezer.
THURSDAY: Tilapia Parmesan with rice and oven roasted broccoli
FRIDAY: Shepherd’s Pie with a green veggie

Thanks for the meal inspirations! I am really into my meal planning these days, makes the week a lot less stressful! Where do you buy the Bionaturae tomatoes, not sure if I’ve seen these at the regular grocery store and it’s been awhile since I’ve been to WFM. I have about 40 tomatoes in my freezer just waiting for me to make them into sauce! Enjoy your week..
I usually pick them up at Kimberton Whole Foods, although I’m thinking I should compare prices to Amazon. Might make sense to order online since I use so many. I think I’ve seen them at Wegmans too, in the organics section.
