Today is my son’s birthday! His birthday dinner request is the Turkey Goat Cheese Lasagna that has become a staple for birthday dinners all year long in our house. I made sure to have the ingredients to make his favorite chocolate cake too. I am happy to say that when I made this lasagna for my daughter’s birthday last month, it turned out great with gluten-free noodles! WOO!! I have missed this dish. I will post the recipe tomorrow, but it’s basically Ina Garten’s with one little twist that I learned by way of a food processor mishap last time I made it. Turns out, it was a great little shortcut that I will now be taking every time I make this dish! (And yes, I will share it with you.)
With that little prelude, here is my meal plan for the week.
Menu Plan Monday
MONDAY: Turkey Goat Cheese Lasagna, Caesar Salad, Garlic Bread (I even bought some GF rolls for myself!)
TUESDAY: Chicken Noodle Soup with corn muffins (I’m going to try this recipe with gluten free flour; I’ll let you know how it turns out.)
WEDNESDAY: Leftovers
THURSDAY: Pot roast, potatoes and carrots
FRIDAY: Chicken Gruyere with rice and steamed green beans
SATURDAY: Ribs from Countrytime Farm (they come prepared and sauced; I just heat and serve!) with mashed potatoes and steamed swiss chard

It’s my daughter’s birthday today, too. She’s 4. Her birthday dinner request was mashed potatoes (which are a mixture of mashed potatoes and cauliflower – not to hide the cauliflower but just because it makes them yummy!), broccoli, and chicken. I love that she chose a healthy meal even after I told her she could choose whatever she wanted. It makes me feel like I’m doing something right! 🙂
