This week I’m focusing on grilling recipes for this lovely spring weather we’re having. Yeehaw!!
SUNDAY: Today we enjoyed these Gourmet Hamburgers on the grill with baked beans (from a can, sorry!) and fresh cut-up veggies
MONDAY: Grilled Marinated Shrimp with Zucchini Noodles
TUESDAY: Marinated Grilled London Broil with mashed potatoes and Sautéed Swiss Chard
WEDNESDAY: Pan-Roasted Pork Loin with Leeks and Roasted Asparagus
THURSDAY: Rosemary Baked Chicken Thighs are always an easy dish to whip up, and I might grill them this time if the weather cooperates. I’ll probably serve them with rice and roasted broccoli or another easy veggie.
FRIDAY: I’ll be hanging out in Philly at the Type A Advanced Conference and gearing up for my speaking gig on Saturday. My family will probably order pizza.
SATURDAY: I’ll be living it up at a conference, but may I suggest my Famous Mojitos with Tequila Lime Chicken, rice and a side salad for a springy Saturday evening?

Oooh, I’m gonna try the rosemary baked chicken! BTW, I made the bacon wrapped chicken from your weekly plan last week and used chicken thighs and it was SO good. My husband LOVED it! 🙂
