This week has been a blur. How about you?? I have never cooked so much in my life. My family, my poor precious guinea pigs, has been so very patient as I continue to chip away at this cookbook project. I’ve had some successes and some failures, and I’m almost halfway there. The first half of the book is due on February 5. I’m saving the fun part for last — the text chapters. Right now I’m plugging away, trying to find enough worthy recipes to fill the other 14 chapters.
Meanwhile all the pancakes and muffins and quick breads are going to my middle and I’m craving meat and veggies. I’m going to peruse my Practical Paleo cookbook for menu ideas for this week.
MONDAY: Italian Stuffed Peppers, side salad
TUESDAY: Crockpot Chicken Curry, rice, salad
WEDNESDAY: Beef & Mixed Veggie Stir Fry
THURSDAY: Mama’s going OUT!
FRIDAY: Buffalo Chicken Lettuce Wraps
SATURDAY: Mahi Mahi with Rose Romanos Peppers, rice, salad

I’ve decided to go meatless for a week a give Kimberly Snyder’s new book The Beauty Detox Foods a try. Need to lose 10 pounds asap! Hoping her suggestions for incorporating a probiotic and digestive enzymes helps.

Girl. I need that! I keep telling myself, as soon as I’m done taste testing carbs for this cookbook, I’m doing some sort of detox.
Practical Paleo is a great book! I can’t imagine how much cooking you have to do to put together a cookbook. I’m impressed you still have the energy to make dinner!
