Weekly Menu Plan 06/24/13

As I explained last week, I put together a whole summer dinner meal plan schedule, and now all I have to do is plug it in each week. This is so liberating! No, I do not stick to it 100% but it’s still nice to have something to fall back on. Here is what I have on the spreadsheet for this week. I will be traveling, so my fam will not be sticking to this meal plan exactly, but hopefully it will provide some real food and gluten free meal planning inspiration for some of you!

MONDAY: Ribs (we buy them pre-marinated at Wegmans), French Potato Salad (recipe to come, steamed green beans and corn on the cob

TUESDAY: Tuscan Lemon Chicken, Asparagus with Browned Butter (recipe to come) and mashed potatoes

WEDNESDAY: Gluten Free Spaghetti (Tinkyada) with Rose Romano’s Italian Peppers and Grated Parmesan with a side salad

THURSDAY: Marinated Grilled London Broil with quinoa and sautéed swiss chard

FRIDAY: take out

SATURDAY: Rosemary Baked Chicken Thighs, rice and Bok Choy with Bacon & Onions

  1. I’m making that gluten free “pizza” pasta you mentioned recently. What a neat, kid-friendly idea 🙂

  2. Oh tonight’s dinner (Tues) looks fabulous. I never strike out with Barefoot Contessa, or Pioneer Woman for that matter!

    Be sure to check the ingredient list for the marinades. I recently found out that the grilled chicken at Wegman’s somehow contains gluten. 🙁

  3. All sounds good! I really need to follow your lead and make a meal planner. It would coming home from work to cook dinner much easier! And your Monday meal sounds wonderful. I’ve never made ribs; maybe I’ll give it a try!
