It’s been quite a weekend for our family! We got home from the hospital late last night, and we’re getting settled back in. I’m planning some comfort food for the next few days while my son continues to heal from his surgery. Here’s what we’ve got on the docket!
MONDAY: Beef Stew {Gluten Free & Paleo} with Udi’s Gluten Free French Rolls
TUESDAY: Pan-Roasted Pork Loin with Leeks, Gluten-Free Mac & Cheese, Roasted Broccoli & Cauliflower
WEDNESDAY: Cheesy Chicken and Rice Casserole with a side salad
THURSDAY: Potato, Ham & Spinach Frittata with a salad
FRIDAY: I’ll be away, so I’m leaving the family with leftover beef stew and the number for pizza delivery. *grin*

I rejoice to hear that your son is home from the hospital and on the mend !! ” You are loved with an everlasting love and underneath are the everlasting arms”. Somewhere in the Old Testament there is a similar expression but Elisabeth Elliott used to always say those very comforting words on her radio broadcasts that I would listen to while picking up my kids from school. Hi jo-Lynn, glad to hear your son is doing well. My 33 year old son has a simular condition that will require surgery. Even though he’s no longer a young boy, I still feel anxious.
