Yikes, I just realized this morning that I forgot to post my menu plan yesterday. Well . . . better late than never, right?? This week’s a doozie with holiday performances, a surgical procedure, a plane trip and all the last minute shopping and planning that goes along with Christmas being TEN DAYS AWAY! Breathe . . . . Okay, so here’s what I’m planning for the menu this week.
MONDAY: leftover meatball hoagies from yesterday (storebought meatballs, sorry, no recipe!)
TUESDAY: Baked Salmon with Roasted Broccoli & Cauliflower and steamed brown rice
WEDNESDAY: Herbed Chicken Rosé with mashed potatoes and Roasted Asparagus
THURSDAY: Chicken & Rice Soup, dinner rolls
FRIDAY: Friday Night Chili with cornbread
SATURDAY: leftover soup/chili
