{Gluten Free} Weekly Menu 02.04.13

When this posts, if all goes as planned, I’ll be at the Target HQ in Minneapolis, Minnesota! I get to meet with marketing leaders and product & development team members and get a behind-the-scenes glimpse into this mega-brand that has become such a staple in our society. I love finding out what makes a company tick — especially one as pervasive and innovative as this one. And I love traveling to new places and getting time away just for me. The weather better cooperate, or else . . .

Meanwhile, the fam has to eat so this is what I have planned.

MONDAY: Chicken & Rice Soup

TUESDAY: spaghetti (you can make this with gluten free noodles) with Rose Romano’s sauce and grated Parm cheese

WEDNESDAY: Pulled Pork sandwiches (easy crockpot meal) with a side salad

THURSDAY: Hamburger Bowls via @Foodiesaurus Rex

FRIDAY: Spaghetti Squash Carbonara via Three Diets, One Dinner (hat tip to Sassy Moms in the City)

SATURDAY: takeout

  1. Jo-Lynne, hope that you had a wonderful weekend 🙂 We are trying to keep warm here in TN. Brrrrh…it’s been cold with more snow than the southerners are used to LOL. I’m loving it and enjoying the time in my kitchen. Thanks for hosting! I’m sharing a childhood favorite with everyone this week.

  3. Wow! I didn’t realize Target’s headquarters were in Minnesota. Brrrrrr.

    My kids want me to do a sandwich night. Maybe I’ll try pulled pork. Hmmm, putting it on the list for next week.
