HOW did it get to be the end of April? I mean, I know, we all say this every month but honestly. It flew by for me. I’m headed out of town this week to the Mom 2.0 Conference in Laguna Beach, California. I know, rough life! Meanwhile my poor family will be left to fend for themselves because I’m just not the kind of mom who can create 5 freezer meals ahead of time. It’s all I can do to keep up with dinner each night, much less make ahead. I will at least leave the pantry stocked with hot dogs (nitrate free, of course) and spaghetti fixins. And I’m sure they’ll have their fair share of pizza takeout.
So for this week’s Meal Plan post, I’m going to feature some recipes from previous linkups that I think look good! ENJOY!!
MONDAY: Slow Cooker Creamy Potato & Leek Soup via Real: The Kitchen and Beyond
TUESDAY: Shredded Beef Taco Roast via Awkward Girl Gets Fit
WEDNESDAY: Crock Pot Chicken Curry via O’Boy Organic
THURSDAY: Shredded Potatoes and Beef Casserole via Not Missing A Thing
FRIDAY: Enchilada Chicken via Foodiesaurus Rex
SATURDAY: Lemony Vegetable Quinoa Salad via Vanderbilt Wife
What are you eating this week?

Hi Jo-Lynne, have fun in California! This week I’ve shared a recipe for super quick organic chocolate caramel popcorn – to satisfy my sweet tooth! And a little post on planning around farmers market finds 🙂
So envious! Laguna is one of my top 5 favorite places on earth. Enjoy! Safe travels!
Couldn’t link to the Lemony Quinoa Salad. Found it here: http://www.vanderbiltwife.com/2013/04/lemony-vegetable-quinoa-salad/
Is this the same?
Yes, thanks!
I hope your family enjoys the enchilada chicken! Thank-you for featuring me today – it made my day!
Today I am sharing my new recipe to sub out cereal in the mornings.
Hope you have a great week!
I’ve been doing a lot of hot dog research myself to find nitrate-free hot dogs and am coming up empty handed. Which ones do you use?
My research has shown me that tricky/sneaky (read: DECEITFUL) hot dog companies are not ADDING nitrates to their hot dogs but instead are using celery powder and juice, which ironically enough, act identically to nitrates, still converting to nitrite in the body and therefore being no healthier.
I’ve looked many places and at many brands and they all have that sneaky celery juice in there.
What brand to you use??
Ha I just read that your family isn’t actually going to eat your menu this week. Well if you do try the enchilada chicken sometime, I hope that you will like it!
Hope you have a fun trip!
