June, lovely June. You have finally arrived in all of your glory! You will NOT hear me complaining about these hot temps. I happily sat in the blazing sun yesterday while my son played baseball and even though running in 80-degree weather on Saturday did not yield a new PR, I did get a medal. So yay! This week my kids have swimming lessons every night so I’m combing through my Recipe Index, looking for the quickest and easiest meals in my repertoire. Here’s what I came up with!
MONDAY: Asparagus Frittata with a side salad
TUESDAY: Friday Night Chili with Gluten-Free Cornbread (I can make this earlier in the day, and then I will save the leftovers for tacos on Friday!)
WEDNESDAY: Pesto Goat Pizza
THURSDAY: Chicken Caesar Salad with Grilled Romaine
FRIDAY: Ultimate Nachos
SATURDAY: Bacon & Mushroom Cream Sauce over Zucchini Pasta and Kale Chips
