Summer’s winding down and I’m looking forward to more soups and pot roasts on my menu plan, but we have a few more weeks left of grilling weather so I am planning to enjoy it!! This week we will be at the beach for a few days (I know, we’ve hardly been home for a week straight this whole summer!!!) so I’m going to copy an old meal plan. We’ll only be making a few of these meals, but hopefully it will give you some meal planning inspiration if you’re at home.
MONDAY: Gourmet Hamburgers, baked beans, tomato mozzarella salad
TUESDAY: Crustless Italian Sausage Quiche with a side salad
WEDNESDAY: Salmon Cakes with a side of rice and Bok Choy with Bacon
THURSDAY: Herbed Chicken Rosé with Simple Sautéed Spinach
FRIDAY: Pan-Roasted Pork Loin with Leeks and Gluten Free Zucchini Cakes
SATURDAY: Grilled Marinated Shrimp and Zucchini Noodles with a salad

The grilled marinated shrimp and the herbed chicken rosé looks delicious. Read your post on how you started a gluten-free lifestyle, I also have a lot of stomach issues. I am tempted to give it a try but I haven’t taken the leap. Maybe incorporating some of your menu ideas will give me the push I need.
Even reducing it significantly might help. 🙂
