Welcome to my weekly meal plan and gluten-free recipe roundup! All of my tried and true recipes are made with real whole foods that will nourish the body and taste great too! If you eat gluten-free or not, I hope you will find some meal planning inspiration from this post. Here’s what I’m planning to cook this week.
MONDAY: Citrus & Herb Whole Roasted Chicken with mashed potatoes and carrots
TUESDAY: Dilled Salmon (recipe to come!) with Roasted Broccoli & Cauliflower and steamed rice
WEDNESDAY: Lydia’s Sausage Kale Soup with gluten free rolls (Udi’s, of course!)
THURSDAY: Cheesy Chicken and Rice Bake (uses leftover chicken from Monday) with a side salad
FRIDAY: Three Cheese & Ham Pizza with Rose Romano’s Italian Peppers and a salad
SATURDAY: dinner out

I bought awhile chicken at Whole Foods today. I’m going to try your recipe but in the crock pot, which tends to work better for dinners for us. I can prep it in the morning or night before and leave it for our nanny to turn on at lunch time. I’ll let you know how it works!
