Happy Thanksgiving Week! We’ve had a change of plans, and we’re going to stay in town over the holiday so I’ve been scrambling to make a meal plan when I figured I’d be eating at my mom’s for half the week. Here’s what I came up with.
MONDAY: Pot Roast with Veggies . . . the ultimate comfort food!
TUESDAY: Sausage Scramble with a Fried Egg and a side salad
WEDNESDAY: Shepherd’s Pie with Tat Soi with Bacon and Onions (using my Bok Choy recipe)
THURSDAY: Thanksgiving Dinner at my SIL’s House
FRIDAY: Shrimp Bisque with Udi’s gluten free dinner rolls
SATURDAY: We’ll probably be getting and decorating our Christmas tree so . . . take out of some sort?

LOL. We usually cut down our tree the Friday after Thanksgiving, at least on the years that we stay in town. And Thanksgiving is late this year so . . . I think this weekend is it! CRAZY I know.
