Happy December! I hope you had a lovely Thanksgiving holiday. Did you do a lot of cooking? Shopping? Eating? Decorating? Do tell!!! I did some of everything, but not a whole lot of cooking (yay!) and I didn’t shop (except for online) until Saturday, when the stores were surprisingly not crowded at all. It was nice. We’re currently redecorating our family room (which involved a spontaneously weekend painting extravaganza — yes, we are nuts) and we also set up the Christmas tree so I have definitely been busy!!
So here’s what I’m thinking meal-wise for this week. What do you have planned?
MONDAY: Chicken & Rice Soup with store-bought dinner rolls (Udi’s for me!)
TUESDAY: Shrimp & Grits with sautéed swiss chard
WEDNESDAY: Pepperoni Pizza Pasta with a side salad
THURSDAY: Sausage Kale Soup with dinner rolls
FRIDAY: leftovers
SATURDAY: takeout for the kids; it’s my husband’s office holiday party . . . which begs the question, WHAT WILL I WEAR??? But I guess that’s a topic for another post.

I made your Ultimate Nachos for dinner tonight. The hubby and I loved them! As I was making them, he said, “We love nachos. Why don’t we ever make them?” It’s a good question. I think we will be having them a little more than once every, say, eight years. Thanks for sharing your recipe!
So glad you enjoyed them! Whenever we have leftover chili or taco meat, we usually make nachos with it the next night. Quick, easy meal! 🙂
