I found so many great recipes last week on my Gluten Free Recipe Linkup. You will see several of them in my menu plan this week! I admit, I’ve been in a rut and I’m thrilled to try some new recipes.

MONDAY:  Chicken Rice Casserole (using leftover chicken and rice from last week) with “Very Different Spinach Salad” — recipe to come

TUESDAY: Whole “Mexican” Family | Enchiladas

WEDNESDAY: Steaks on the grill, baked potato, sautéed spinach

THURSDAY: Spicy Paleo Coconut Shrimp

FRIDAY: Salmon Cakes with quinoa and Easy Crust-less Spinach & Feta Pie (never made this last week)

SATURDAY: Hamburger Vegetable Soup

    I was wondering on a similar note,, breakfast – a single banana
    lunch – minimal bowl of basic amaranth w/ cocoa powder
    Nice One!
