Good morning! Who has fun plans today??

We don’t have any big favorites in the Super Bowl so we’ll just be watching to justify the massive amounts of salty snacks we will be consuming. I’m stuck here at home with my foot up (cortisone shot complications . . . ain’t life grand??) while the rest of the fam goes to church and then joins my inlaws for lunch and a little 80th birthday celebration. I don’t do “sit around with your foot elevated” well so this should be interesting.

It’s not all woe is me around here though. I do have some fun news to report. Yesterday Redbook, Elle and Cosmopolitan magazines all ran a feature on gluten-free recipes to kick off the Super Bowl, and my Buffalo Chicken Dip was featured. How fun is that!?

So here’s what I’m planning to feed my family this week.

This Week’s Gluten-Free Dinner Menu Plan

MONDAY: Cheesy Chicken and Rice Casserole with steamed haricot verts (bought some at Costco, will be eating these all week!)

TUESDAY: Beef Stir Fry with Bell Peppers

WEDNESDAY: leftovers (I’m going out so the fam can scrounge. bwahaha!)

THURSDAY: Shrimp & Grits with steamed haricot verts

FRIDAY: Pan-Roasted Pork Loin with Leeks, scalloped potatoes and roasted broccoli

SATURDAY: going out! family game night at church, so we’ll eat there.

  1. Buffalo chicken dip is our favorite as well. I turned it into cheesesteaks in the crockpot, and it is my most popular recipe now! It’s not very healthy though 😉

    Congrats on the Redbook feature, that is pretty exciting!

  2. Congrats on the buffalo chicken being featured in Redbook, that’s awesome! I’m headed into week 2 of no meat going by The Beauty Detox book. It’s been so much easier than I anticipated. After your cookbook deadline, you should really try it.

  3. I’m so sorry for all that you are going through. Running injured me as well and I had to give it up. First I had stress fractures in both legs that were supposed to heal in 6 weeks, which was actually 6 months. Then about a year later, I too had plantars faciatis (or however you spell it. Not gonna bother to look it up now). Mine hurt all the time, even when I was sitting. Doctor suggested that I rest it and wear a boot at night (which helped). I ended up having to stop running, which at the time, was devastating to me. While I have always had a love/hate relationship with running, I was finally in a good place with it, and I was going to miss it tremendously. I moved on to other activities and ended up gaining weight – from my eating, not exercise or lack there of – I’ve struggled with my weight for the past 10 years. Has nothing to do with running or not running. I actually took up running cuz I thought I’d loose weight quickly. Anyway, I ended up loosing 50 lbs last year and decided I’d go for a run. Surely, being lighter would help me and I’d be able to enjoy running again. Not everyday like before, but maybe just once a week. Get out, enjoy music blaring in my ears, the fresh air, outdoors, feeling of accomplishment. Well, not so. First mile I felt GREAT!!! Seriously, wonderful. Second mile my knees started to really hurt, on the outside of my legs, everything from the waist up felt great, including my mind, which for me, was half the battle. By mile three I could barely walk. Ended up having to ice both knees for the next two days. Running is obviously not my friend. I tell you all this because I totally understand your pain and frustration. Yes, it’s not cancer, and that’s something to truly be grateful for. But still, if you do have to give up running, it is a loss for you. And it’s okay to mourn that loss and be sad and angry about it. But like most things in life, “this too shall pass”. Hang in there.

    On a happier note, I truly enjoy your blog (and envy your long slender legs!).
