Why breakfast? For me, breakfast was (and still is) the hardest meal to make gluten-free. There is only so much bacon a person can eat (believe it or not!!!) and when you’ve grown up on pancakes and waffles as standard breakfast fare, switching to a gluten-free lifestyle can be overwhelming and depressing.
