Happy Memorial Day!
I hope everyone is getting a day to veg and enjoy your family. And please don’t forget those families who have lost loved ones in our nation’s service. It’s so easy to get caught up in picnics and parades and forget the reason we are getting a day off.
Here’s what we’re planning to eat this week:
MONDAY: ribs, corn on the cob and sautéed spinach (I bought pre-marinated ribs at the farmer’s market, but you can check out Lydia’s Braised Country Style Pork Ribs if you want a recipe to inspire you.)
WEDNESDAY: Crustless Chard Quiche with a strawberry salad (recipe to come)
THURSDAY: beef brisket with mashed potatoes and a fresh veggie (waiting to see what we get from the CSA this week!)
FRIDAY: Linguine with Shrimp Scampi and a side salad
