This is kind of an off week for menu planning, what with the holiday weekend, and tonight I get to tag along on my husband’s business dinner.
MONDAY: out to dinner, WOOT!!
TUESDAY: Company Pot Roast (even though there’s no company coming, this is a delicious and easy meal that our whole family loves! you can easily make it gluten free by using rice flour to thicken the gravy)
WEDNESDAY: Italian Turkey and Spaghetti Squash Pie (tis the season for spaghetti squash! even if you aren’t gluten free, you should try this! it’s delish. even the kids love it)
THURSDAY: THANKSGIVING! We’ll be eating a traditional T-day dinner at my SIL’s. I am bringing a cheese tray (with Mary’s Gone Crackers for my gluten-free enjoyment!! and I’m looking for another gluten free app to bring. I’m open to suggestions!!
FRIDAY: leftovers (SIL is always generous to send home leftovers)
SATURDAY: Rosemary Baked Chicken Thighs, Bok Choy with Bacon & Onions

Do you have suggestions for a simple GF dessert for Thanksgiving? My sister is worried that she won’t have anything to eat. I think I’m going to make this Cranberry Cream Cheese Dip for an appetizer for our Friday gathering. And maybe a pie with Gluten-Free Pie Crust? I don’t have a lot of experience with the special flours, but I want her to have something to enjoy, too! 🙂

I like Heather’s suggestion, but if in doubt, pick up some Udi’s cookies or brownie bites to have as a backup!
I just made company pot roast the other night. It is johns favorite. I also made that gf choclate pudding pie Udi’s posted the other day. I am taking that to thanksgiving. Yum. For a great appetizer I would make the skinny girl buffalo chicken dip. I serve with carrot sticks and celery and tortilla chips. Gf and a huge hit.
