I’ve been out of town all weekend, and I’m feeling a little bit out of it. Re-entry is always tough. But life must go on and we must eat, so this is what I’m planning to make this week.
MONDAY: Pumpkin Pancakes via Practical Paleo (If it’s good, I’ll share the recipe!)
TUESDAY: Friday Night Chili with Sweet Cornbread via Home Ec 101
WEDNESDAY: Mahi Mahi with Rose Romanos Peppers, quinoa and a salad
THURSDAY: Mustard Glazed Chicken Thighs via Practical Paleo with roasted carrots and a salad
FRIDAY: leftover chili
SATURDAY: sushi nite!

Is the roasted carrots recipe in Practical Paleo or just a general recipe you use? I came home from Costco with a huge bag of skinny organic carrots which dh is not happy about; now I need to use them up. Thanks!
Just a general recipe, although I do think she has one. I just toss them with olive oil, salt and pepper and roast until they look good. Then sometimes sprinkle with dried dill.
Oooo, I have to try Rose Romano’s with fish.
It is my FAVORITE way to eat it!
Sushi night! I love sushi – I wonder how a sushi night would go down in our house? I’ll have to give it some serious thought 🙂
