I’m so excited to be heading up to NYC later today for Target’s Media Day. I’m a part of the Target Inner Circle, which is a small team of social influencers who get to bring you (our readers) the inside scoop and exclusive access to Target!
I’ll be gone for two nights, and my family will be suffering through takeout and leftovers. (My husband was traveling last week, so I don’t feel TOO badly for him!!)
Rather than featuring my own recipes this week, I thought I’d highlight some of those that have been linked up to my Gluten Free Recipe Round-Up!
MONDAY: Sausage and Sweet Potato Hash via Practical Paleo
TUESDAY: Stuffed Zucchini Boats via Allergies & Celiac and Gingered Carrot Coins via A Life In Balance
WEDNESDAY: Chipotle Pork Tenderloin via Flippin’ Delicious with Twice Baked Faux-tatoes via Anne-Marie Cain
THURSDAY: Black Bean Salsa Soup via Gluten Free A-Z Blog
FRIDAY: Pork Chops with Rose Romano’s Peppers via Girlymama
SATURDAY: Crockpot Chicken and Chicken Enchiladas via Wholesome Dinner Tonight
What are you eating this week?

Thanks for hosting! I need to check out the chocolate cake recipe. It’s DS8’s birthday on Wednesday. I’m hoping I have time to make a cake, and I’d prefer a gluten-free one.
What kind of cake did you end up making?
LOL It was one of those birthdays where I ended up buying the cake. We tried a new bakery, and loved their cakes. Very similar to homemade.
That sausage and sweet potato hash from Practical Paleo has been on my “to try” list for weeks now, and I just can’t seem to get it on the menu plan. You’ll have to share how it is!
I haven’t made it yet either, but I want to!
Have a great time in NYC! This week I’ve shared a recipe for a GF, EF, DF spiced butternut squash scone, and some info on using other types of squash as a sub for pumpkin.
Oh yum!
Hi,
