Menu Plan Monday


Can someone please explain to me how it came to be Monday again?  This week flew by particularly fast, I guess because we spent the better part of our weekend roasting at the ball field.  My son had games both Saturday and Sunday.  Saturday it was 240 degrees, and we sat in the sun from 3 to 5pm while our team lost their very first game of the season.  It’s pretty demoralizing to lose your first game of the season in the playoffs.  Not only was it discouraging for the boys, but it means that they now have a game every day this week, instead of cruising till the last day.  Bah humbug.

Then yesterday afternoon was basically a waste because I spent four hours of my life sitting out rain delays (or, more accurately, lightening sensor delays.)  Evidently some lawyer somewhere decided that we needed lightening sensors at the ballpark and if it detects lightening anywhere in a 10-mile radius, we have to sit out for 20 minutes.  The irony of the situation is, they were sitting out when it was sunny and playing when it was raining.  Yeah, that makes a wholelotta sense.  We only got through four innings (in four hours!!) before they finally gave up the ghost and called the game.

Have I ever mentioned how much I hate organized sports at this age?  Ugh.

Since this week is the playoffs and we have baseball games every. single. night, I’m keeping our dinners pretty simple.  And also?  It is the last week of school.  I don’t know whether to mourn or celebrate.  I guess I’ll decide that next week when I have all three kids home with me all day every day.

Meanwhile, here is my meal plan for the week.  I hope it inspires some of you to try meal planning (I KNOW.  But really, it makes life SO much easier.)  And even if you don’t plan your meals, I hope you find a few new recipes to try.

MONDAY: salmon cakes, fresh veggie

TUESDAY: Charred Tomato, Chicken and Tortilla Soup*

This is a new one for us.  I received Sara Moulton’s Everyday Family Dinners in my swag from the Best Buy event last week, and I spent some time this morning perusing her recipes.  I thought this looked interesting, but it may not work out this week with all the games.  I generally don’t try new recipes when we’re in a time crunch, but I’m hoping I can make this earlier in the day and heat it up when the kids get home from school as an early dinner.

WEDNESDAY: gourmet burgers on the grill and sauteed spinach*

*Two of my kids don’t care for spinach so I’ll heat up some frozen peas or put out raw carrot and red pepper sticks for them.

THURSDAY: curry chicken pot pie

FRIDAY: beef tacos

SATURDAY: leftovers?  or celebratory pizza (if we win the tournament!)

  1. I’m glad I’m not the only one whose weeks are filled with baseball, baseball and more baseball (of course I LOVE it, so it’s not an issue – except for the ding-dong weather). 240 degrees, yes Friday it was 240 degrees here with 80000% humidity. ‘

    My son plays on the league team and also a traveling team, so weekends we spend traveling somewhere….exotic, you know like central Iowa.

  2. I’d love to see a picture of that soup when you’re done! We’re having the buffalo chicken dip with veggies tonight – it sounded too good to pass up!

  3. Soooo….can I come over for dinner? Chicken pot pie is one of my favorites and I love the idea of adding a little curry to spice it up!

  5. I know this is a late comment, I’m playing catch up here… but I have to add something I learned that surprised me. Turns out that lightning can strike anywhere up to 20 miles away. Meaning the storm could be 20 miles away from you, you’re in clear skies and BOOM. A striker could come and nail you. Talk about bad luck!!

    But I hate it too. I always hate having to get out of pools just because some stupid lightning just had to hit 10 miles away. 🙁 Pain in the tuckus.
