I hope everyone is enjoying this glorious fall weather! I’ve been using my crockpot this week and loving it. How about you? Are you cooking differently now that the weather is cooling off? Here’s what I have planned for this week.
MONDAY: We will be eating leftovers, but may I suggest a nice grilled steak with baked potatoes and my Beet & Goat Cheese Salad??? (We had steak last night at a neighbor’s and it was so lovely!!)
TUESDAY: Crustless Chard Quiche with a side salad
WEDNESDAY: I’ll be in NYC at the Fashion Forward Conference, so my family will have to survive on leftovers.
THURSDAY: Oregano Chicken (always a quick and easy weeknight dinner) with roasted-and-mashed butternut squash and Simple Sautéed Spinach
FRIDAY: Grilled Shrimp & Yellow Grits Over Sautéed Chard via Cooking with Erin — I’m dying to try this!
SATURDAY: Easy Crockpot Pulled Pork, steamed green beans and Gluten-Free Mac & Cheese made with brown rice pasta (carb loading for my half marathon!!)
Actually . . . after getting some advice from friends, I have decided that dairy is probably not the wisest idea before a race, so I will be making a roasted chicken with carrots and rice. But you may feel free to put my mac & cheese on YOUR meal plan this week! It is delish. You won’t regret it . . .unless, of course, you are also running a race the next day. Haha.
SUNDAY: MY HALF MARATHON!!!!! I have no idea what I’ll be eating but I know I won’t be cooking it. We will probably end up at our favorite family dinner spot, Iron Hill Brewery.
