Roasted Strawberry Smoothie Recipe

At the start of every year, I find myself making a renewed commitment to simplify my life. This year I’ve been decluttering our home like never before, and I love my newly tidied space! Isn’t it funny how organizing and simplifying one area of your life causes you to want to organize and simplify other areas as well?

This has definitely been true for me this year. I’ve lost 5 pounds since the holidays, and I truly believe I owe that in large part to the process of simplifying our home. I don’t want the junk so much anymore — not in my house, and not in my body.

When you get the junk out, you make more room for the good stuff — both in your home AND in your diet, so I’m partnering with Friendship Dairies to bring you another healthy recipe with their delicious, protein-packed cottage cheese.

Roasted Strawberry Smoothie Recipe: This decadent cottage cheese based smoothie is packed with protein and nutrients for a healthy breakfast on the go!

You may remember this Sweet & Crunchy Cottage Cheese Breakfast Bowl and this decadent Mediterranean Cottage Cheese Party Dip. This time we used their Superfood Generator to come up with this luscious Roasted Strawberry Smoothie recipe!

Friendship Dairies cottage cheese is The Original Superfood. It has been around since 1917, and it’s super high in protein — their 1% cottage cheese has 15g of protein per serving, and the 4% has 14g — making it a good source of long-lasting energy.

Smoothies are one of my favorite ways to get more good stuff into our bodies because they’re easy and delicious, and my kids love them. Berry smoothies are my go-to. For this smoothie, we used roasted strawberries, raw honey, a banana, and Friendship Dairies cottage cheese to create a protein-packed smoothie that even the kids will want to devour.

Roasting the strawberries, especially in the off season, makes them a little more delicious, and it helps them break down easier in the smoothie as well.

The cottage cheese adds protein, raw honey is a natural sweetener with nutritional benefits, and the banana helps thicken it up. This combination of ingredients packs quite a nutritional and protein punch!

Roasted Strawberry Smoothie Recipe

This protein-packed smoothie is as delicious as it is nutritious! Roasting the strawberries adds sweetness and helps them break down easier in the smoothie.
Ingredients
  • 16 oz whole strawberries
  • 2 TBS sugar
  • 1 cup whipped Friendship cottage cheese
  • 2 TBS Honey
  • 1 tsp vanilla
  • 1/4 cup water
  • 1/2 large banana or 1 small banana
  • 1 cup Ice
  • Whipped Cream (optional)
Instructions
  1. Preheat the oven to 350 degrees.
  2. Clean and hull the strawberries. Place them in a small oven-safe dish, toss with the sugar, and roast for 30 minutes or until done, tossing once during cooking time. If your strawberries are large, halve them.
  3. Allow the berries to cool.
  4. To make the smoothie, combine the roasted berries, their juice, cottage cheese, honey, vanilla, water, banana, and ice in your blender; blend until smooth.
  5. Taste, adjust for sweetness preference as well as thickness. See notes.
Notes
The sweetness of the strawberries will vary, especially by season. Add more honey, sugar, or your sweetener of choice until you get the taste you desire.[br]The banana adds thickness, flavor, and nutrients. If smoothie is too thick, add a bit more water.[br]Roasted berries can be prepared a day ahead and kept sealed with their juices in the refrigerator.

  1. I love cottage cheese but I’ve never thought about putting it in a smoothie, I’m pregnant and have been on a smoothies / strawberry kick so I definitely will be trying this.

  2. I was wondering if there is nutritional information for this smoothie and where I may find it? Sounds really good and I would love to try it. Trying to keep my protein numbers up and counting carbs

  3. This looks amazing. I’ll be honest. I have never heard of roasting strawberries before. I’m interested to see how they taste roasted. Sweet? Sour? I’ll have to give it a try.

    I never heard about putting cottage cheese in a smoothie, but I like this idea because I love both cottage cheese and strawberry. I definitely going try this tomorrow.
