I hope everyone’s enjoying their Memorial Day weekend! Here’s what’s on our menu this week, in case you’re in need of some dinnertime inspiration. All my recipes are made with real, whole foods and are gluten-free. We just had our first CSA pickup of the season, so I’m all excited to use our fresh veggies.
SUNDAY: Today we’re eating out with my inlaws for lunch after church so we’ll probably scrounge up some leftovers for dinner unless I get supremely motivated between now and then!
MONDAY: Memorial Day Cookout: hamburgers & hotdogs, baked beans, deviled eggs, tomato mozzarella salad and raw veggies for nibbling (probably more than that… we’re going to a friend’s house so I’m not sure what all she’s gonna have. I will post my deviled egg recipe later this week. I didn’t realize I’d never done that!!)
TUESDAY: Crustless Italian Sausage Quiche with a side salad of fresh lettuce greens from our CSA! YAY!
WEDNESDAY: Salmon Cakes with a side of rice and mustard greens/kale sautéed with bacon – I’ll be using this recipe but subbing the greens I have for the bok choy.
THURSDAY: Herbed Chicken Rosé with Simple Sautéed Spinach
FRIDAY: Pan-Roasted Pork Loin with Leeks and Gluten Free Zucchini Cakes
SATURDAY: takeout ?
